    2018 Fiano was harvested from the Lacey vineyard in the Sellicks Foothills sub region of McLaren Vale on Feb 19, 2018. The wine was not crushed but destemmed, then whole berry pressed to both barrels and tank. Barrels were fermented wild with full solids while the tank portion was racked of gross lees before undergoing fermentation using cultured yeast. No other additions were made. After primary fermentation was complete, the wines were racked off gross lees to tank and then kept at 0°C for four months with no SO2 in order to allow the yeast lees to remain active and offer protection from oxidation and develop texture in the wine, but with the cold temperatures preventing the onset of malolactic fermentation. A small amount of SO2 was then added and the wine was bottled without fining or filtration. Artwork by Saul Matthews.

    The Sangiovese for our 2018 rosé was harvested from the Mayfield vineyard in the Sellicks Foothills sub region of McLaren Vale on March 7. It was crushed and left on skins for 4 hours before it was basket pressed and fermented cool in tanks with wild and cultured yeast. It was bottled unfined and unfiltered. Artwork by Saul Matthews.

    64% Clarendon (McLaren Vale) Grenache, 36% Kangaroo Island Tempranillo. 30% whole bunches, wild yeasts, no fining or filtering. Bright, juicy and perfumed. Bottled young in order to preserve its youthful vibrancy. An ideal wine for McLaren Vale's hot summer climate. 100 dozen produced.

    The 2016 Grenache is a blend of two vineyards from the north-east end of McLaren Vale. 1.6 tonne of fruit was harvested from Bernard Smart’s vineyard in Clarendon (planted in 1921), and 1.3 tonne of fruit came from the Wait family vineyard in Blewitt Springs (planted in 1942). The Smart fruit was crushed and destemmed while the Wait fruit was left with approximately 30% whole bunches. Ferments were handled gently with no additions, pressed to old large format oak up on completion of primary fermentation and left on fine lees for elevage. The wines were not fined or filtered.

    88% Shiraz, 12% Mataro. Shiraz from three vineyards – Dry Creek vineyard and Whites Valley vineyard in the Sellicks Foothills sub region, and the Sherry vineyard (planted 1955) in the Kangarilla sub region. Crushed and destemmed, 12-14-day ferments. Pressed to tank and settled for three days before gravity racking to French and American oak hogsheads (7% new). Wines were not filtered or fined.     The 2017 Cabernet Franc was produced with fruit from the Sommerville vineyard on Malpas Road., just outside of Willunga. 1.2t were harvested on March 24. 2017 was a vintage that was moderately cool by McLaren Vale standards, and saw grapes ripen with excellent phenological ripeness in congruence with sugar ripeness, leading to good flavour at lower alcohols in the finished wines. Ferments were kept cool and therefore fermented slow, and after primary fermentation the wine was gently basket pressed into old oak and matured on fine lees for 12 months prior to bottling. The wine was bottled unfined and unfiltered.
