Shiraz from three vineyards – Dry Creek vineyard and Whites Valley vineyard in the Sellicks Foothills sub region, and the Sherry vineyard (planted 1955) in the Kangarilla sub region. Crushed and destemmed, 12-14-day ferments. Pressed to tank and settled for three days before gravity racking to French and American oak hogsheads (7% new).
