From the Sherry vineyard (planted 1955) and Wait vineyard (1943) in the Blewitt Springs sub region of McLaren Vale. The Sherry vineyard fruit was crushed and destemmed, while the Wait vineyard fruit had about 20% whole bunches left in the ferment. After fermentation the wines were pressed and settled and sent to old oak puncheons and barriques for malolactic fermentation and maturation. The wine was not fined or filtered.
