2017 Juxtaposed ‘Bigger Boat’ Fiano

1.5t harvested on 13/3/17 from the Lacey vineyard in the Sellicks Foothills sub region of McLaren Vale. Destemmed, then gently whole berry pressed. Free run juice straight to 1 hogshead, the rest cold settled and racked leaving 15% solids for primary ferment in tank. No adjustments. Barrel was wild fermented with the tank portion fermented cool using cultured yeast. Post primary ferment the wines were racked to 6yr old French oak hogsheads, and transported to a 0° cold room, where they remained for 3 months with no SO2. This was done to keep the active yeast culture alive, to better augment the textural components of the wine, while preventing malolactic fermentation. The wine was racked prior to bottling with a small amount of SO2 added. Bottled 21/6/17, 88 cases produced. 12.0% alc/vol. Artwork by Saul Matthews.
