Wine Picked from a small block of three Portuguese varieties, our modern style Vintage Fortified is made up of 60% Touriga Nacional, 20% Tinta Cão, 20% Tinta Negra Mole. Grapes were all harvested on the same day. First crushed and destemmed, then foot trodden in the traditional Portuguese way by my kids. The base wine was fermented cool and slow, so it would retain its delicate aromatics. The wine was pressed off, fortified with Brandy spirit and left on lees of 10 months. We have left our Vintage Fortified with less residual sugar than most traditional Fortifieds (approx. 56g residual sugar), but this was done in order to maintain better balance in the wine.
